名貴新潟縣佐渡産真鱈及白子  滋潤養顏酒粕湯鍋
「真鱈酒粕鍋套餐」加入新潟獨有食材,且賣相精緻,盡顯廚師心思。一共6款菜式包括: 前菜海鮮拼盤味噌烤黃金豬肉真鱈酒粕湯鍋釜炊新潟越光米土鍋飯雲呢嗱雪糕。其中重點推介的食材,包括來自新潟縣佐渡海域的真鱈,真鱈是雪季當造的魚類,每年12月至3月期間,為了禦寒及準備交配,游回至近岸產卵,故有「寒鱈」之稱。其中雄性真鱈更是冬天的桌上佳餚,由於其白子(意指:精巢)特別肥美,含豐富蛋白質、維他命D等,具滋陰養顏之效,日本人都愛吃白子補身,被視為美膚之寶。新鮮的白子質感柔滑豐腴,沒半點腥味,適合做火鍋或以醋漬生吃,今次海老の髭的「真鱈酒粕鍋套餐」帶來「真鱈酒粕湯鍋」壽司兩種食法,讓食客全面體驗北陸的滋補鮮味。

「真鱈酒粕鍋」湯底以酒粕為主,酒粕即酒糟,是清酒釀造過程中,原料的米與米麴在水中發酵並隔出清酒後,殘留下的固體物。含有豐當酵母的酒粕,營養價值比清酒本身還高,有防止皮膚色素沉澱、促進消化、整理腸道等效果,是近年在日本大熱的健康調味料。不同酒造所做出來的酒粕味道並不一樣,這次選用的新潟縣「朝日山」的酒粕,味道甘甜柔和,正好引出真鱈的鮮美。海老の髭以酒粕加白味噌,配上大根、紅蘿蔔、里芋等「根野菜」,以及豆腐和菇類淆製湯底,清甜美味的野菜中滲滿清酒的甘香,再輕灼真鱈魚肉與白子,暖呼呼的真鱈魚肉肉質肥美、嫩滑甘香,白子更入口即溶,滲滿魚香的酒粕白味噌湯美味得令人不禁一喝再喝。
海鮮拼盤中的醋漬鱈魚白子,將烚過的白子蘸上柚子醋,柚子醋完全帶起白子的鮮味和質感,口感如豆腐般細滑。味道鮮美的昆布漬鱈魚壽司則以昆布來收乾水份,令鱈魚帶甘的鮮味更見濃郁。

黃金豬肉與越光米土鍋飯    盡顯新潟鄉土特色
除此之外,「真鱈酒粕鍋套餐」內包括海老の髭固有的獨特菜色,前菜拼盤中的甘醋三文魚鼻軟骨以當造三文魚的鼻軟骨加上三文魚子和白蘿蔔蓉,再以甘醋稍作調味,清新開胃;海老芝煮以味醂、砂糖、昆布汁等調味煮熟海老,誘發出源源不絕的鮮味。類似玉子燒的伊達卷,製作時會加入魚肉,整塊烤焗後再以竹卷定型切割,口味嶄新。另一道昆布巻將昆布卷著三文魚紮好,再加砂糖和醬油調味,甜味濃郁。

味噌烤黃金豬肉以攝氏65度烤香新潟產越乃黃金豬,上枱前再用烤爐將表面烤香,既香口又能夠保留豐富的肉汁。越乃黃金豬是長白豬、約克夏豬、杜洛克豬交配的豬種,在優質的荒川河水滋潤下,飲用孕育出越光米的潔淨水源,飼料加入了草本物質、氨基酸、活菌劑,令豬肉含豐富亞麻酸及維他命E,肉味濃厚鮮甜,脂肪肥美帶得令人垂涎。海老の髭招牌釜炊新潟越光米土鍋飯選用越光米中最優質的品種—魚沼產越光米炮製的土鍋飯,簡單以新潟縣產鹽胡麻鹽調味。新潟出產的鹽因其豐富和濃厚味道,深受當地人歡迎。這次與魚沼產越光米結合,恰好引出米香,令米飯更見甘甜,建議第一碗飯不加任何調味,享受魚沼產越光米最原本的米香。第二碗則配漬物三文魚昆布品嚐,一濃一淡令人不楚多吃幾口飯。

YONEKURA集團於1989年在新潟縣成立,在日本擁有11間居酒屋。海老の髭(Ebi-no-Hige)香港店於2015年3月開業,是香港首間來自日本新潟縣的居酒屋。由新潟出身的料理長高見信和精心主理,懷石料理出身的高見師傳曾在海外研修,菜式賣相精緻,亦擅長在設計創意傳統日菜中,店內大部份食材由日本新潟縣入口。
